Pineapple Coconut Mocktail
I have a friend who’s really into Tiki culture and drinks and serves them at his house for game nights. He’s also really considerate and inclusive and ensures we can make mocktail versions of the same drink. This pineapple coconut drink is a mocktail version of the classic Tiki drink, the painkiller. Instead of rum, I added a spiced bengal tea and immediately fell in love with this drink. The spice of the tea works so well with the creamy coconut and tropical pineapple. It was one of the best mocktails I ever had and needed to recreate it at home:
*Recipe:
3 oz spiced tea, like Chai or Bengal, steeped and cooled down
4 oz pineapple juice
1.5 oz cream of coconut
1 oz orange juice
Add all ingredients to a shaker with ice and shake them up! Pour on ice in a tall glass and garnish with a tiki umbrella or flower, if desired.
