Spicy Ginger Mango Mocktail
I just returned from a trip to Vancouver, Canada, and had the most delicious mocktail. My husband and I rented a car that day, and drove it up to Squamish for the most incredible views of snowy mountains and crystal blue waters. We stopped along the way to see waterfalls, take photos, and look out of vista points. Considering it was 30 degrees Fahrenheit and the winds were crazy blistery, every time we got out of the car, we were windswept frozen. We have some hilarious photos, of us almost being toppled by wind, with hoodies pulled up over our faces and excitement of adventure in our eyes.
Starving, we stopped at Cactus Club, which came highly recommended, and made it just in time for happy hour, where I was able to try a spicy jalapeno ginger mango mocktail. It was so good, the meal delicious, and a perfect way to breathe in our day. Here is my recreation:
Recipe:
4 oz ginger beer
3 oz mango juice or nectar
Juice of half a lemon
3-4 slices of fresh jalapeno
Sparkling water
Ginger bitters, if desired
Add mango juice, ginger beer, lemon juice, and 2-3 slices of jalapeno into a cocktail shaker on ice. Mix! Pour over a glass with ice, and top with sparkling water to your liking. Top with ginger bitters, if available and desired. Garnish with one jalapeno slice.
