Virgin Piña Colada
It's summer and it has hot! The ocean water temperature in San Diego, which is notoriously cold (at least for a wimp like me), just broke a hundred-year-old record for an all time high of 79 degrees. That's like bathwater. Also tropical fun. Cool off and indulge with a virgin piña colada. I usually tout that mocktails are a much healthier alternative to cocktails, especially when made with less sugar and fresh fruit juices. This drink is not healthy. It's more like a milkshake. Sometimes soba girls need a tropical [vegan] milkshake.
Recipe:
1 cup cream of coconut
1 cup pineapple juice
1.5 cups chunks of pineapple
1.5 cups of ice
Maraschino cherry and pineapple slices for garnish
Put all the ingredients in a blender (except for the garnish) and blend on high for a minute or two. I wasn't trying to make a slushy, but if you prefer that consistency, add more ice. Pour in a glass and garnish with cherry and pineapple slice, and a tropical umbrella if you have one. Mahalo.
